In the classic version of the game, the Stranglethorn Fishing Extravaganza can only be tried out during a specific time of the week.
Players can only try the competition out when it is 2:00 PM and Sunday in the country where the server they’re accessing is located. In simpler words, it is a limited weekly event in WoW classic that only comes once every Sunday, so you’ll have to wait until it is finally time to start the Stranglethorn Fishing Extravaganza.

In the Battle of Azeroth, the Stranglethorn Fishing Extravaganza is actually a world quest. You obviously can’t start performing a quest exclusive action until you’ve accepted the mission that said action is linked to. That being said, you need to accept the world quest related to the Stranglethorn Fishing Extravaganza in order to begin.
Once this is done, the competition should start and you’ll be tasked with completing it as quickly as you can to collect your rewards. Make sure that you don’t have any major quests active at the time as that can cause problems with this specific solution at times. If it still doesn’t start once you’ve tried both this and the previous solution, try this one last solution.

It is recommended that you ensure that War Mode isn’t enabled in your game, as players usually find it hard to start the Stranglethorn Fishing Extravaganza while it is active.
